* Carrot, Apple and Orange juice...
* Coconut Muffins (four ingredients, I kid you not - 1cup each of self-raising flour, desiccated coconut, sugar and milk (we used lactofree) - mix, spoon in to papers and bake at 180C for 20 mins)... like little cakier macaroons, soft as clouds and oddly lovely with a little butter (or for us, pure spread!) and tea...
* Cucumber, Celery and Apple Juice. Toast, cucumber, cheese, yoghurt... tea...
* Assam tea...
* We ate too fast to photograph it first... what's left of Miso Grilled Tofu with Sesame, Gyoza parcels and Edamame...

i am definitely going to try your cake recipe. looking for birthday buns for elsa and your recipe could be a winner (no egg and i could use oat milk?) thanks for the inspiration.

The cake recipe is fantastic- really scrummy, but quite sweet (the saltiness of the butter really works as it kind of cuts through the sweetness, if you eat them like scones more than buns).
I think next time i'm going to reduce the sugar slightly, but i'm not sure what that will do to the texture- if anything!
Anyway, with regards oatmilk, I can't see any reason why not. The biggy is to use self-raising flour, and proper cheapy desiccated coconut (none of this fancy shredded stuff!). Have a wee experiment and let us know!
Hi - I just found your blog and have been reading from the most recent post backwards. I just tried your Coconut Muffin recipe, reducing the sugar to roughly 2/3 cup, and they were so yummy! Thanks for sharing.
